How to Make Apricot Glazed Pork Chops

  1. Preheat grill to medium-high heat.
  2. In a small saucepan, combine 1/2 cup apricot jam, 2 tablespoons apple cider vinegar.
  3. Cook over low heat, stirring constantly, until jam melts completely (about 2-3 minutes).
  4. Stir in 1 tablespoon soy sauce, 1 teaspoon grated ginger, 1 clove minced garlic, and 1/4 teaspoon cayenne pepper (or to taste).
  5. Remove from heat and divide the glaze into two small bowls; set aside.
  6. Trim excess fat from 2 pork chops (about 1 inch thick).
  7. Lightly brush both sides of the pork chops with 1 teaspoon olive oil.
  8. Season both sides of the chops with freshly ground black pepper.
  9. Place pork chops on a preheated, well-oiled grill grate.
  10. Brush one side of the chops with half of the apricot glaze. Cook for 2-3 minutes.
  11. Flip the chops, brush the other side with the remaining glaze, and cook for another 2-3 minutes.
  12. Check for doneness by cutting into the center of a chop. The internal temperature should reach 145°F (63°C). You should see a light pink blush near the bone.
  13. Remove from grill and let rest for 2-3 minutes before serving.
  14. Add salt to taste at the table. Serve immediately and drizzle with any remaining glaze.
