How to Make Apricot Heaven
- Juice one fresh orange (about 1/2 cup juice).
- Combine 1 cup dried apricots, 1/2 cup orange juice, and 1/4 cup water in a small saucepan. Bring to a boil, then reduce heat and simmer gently for 10 minutes, covered. Stir in 1 tablespoon Grand Marnier during the last minute of cooking.
- Once the apricots are tender, carefully puree the mixture using an immersion blender or regular blender until smooth.
- Taste the apricot puree and add more Grand Marnier (1/2 - 1 tablespoon) if desired.
- Ensure the apricot puree is thick; if not, simmer uncovered for a few more minutes to reduce.
- Allow the apricot puree to cool completely.
- Spread the cooled apricot puree evenly in a 4.75-inch (12cm) diameter glass serving dish (approximately 1.75 inches/4.5cm deep).
- Spread 1 cup plain yogurt evenly over the apricot layer.
- In a small bowl, whisk together 2 tablespoons brown sugar and 1/2 teaspoon ground cinnamon until well combined.
- Sprinkle the cinnamon-sugar mixture evenly and thickly over the yogurt layer.
- Refrigerate for at least 3 hours, or preferably overnight, to allow the flavors to meld and the cinnamon-sugar to dissolve into the yogurt, creating a delicious syrup.
