How to Make Apricot Lamb Kebabs

  1. In a small bowl, whisk together ½ cup apricot nectar, 1 cup chopped dried apricots, 2 tablespoons olive oil, 2 tablespoons golden syrup, 2 cloves minced garlic, 1 tablespoon chopped fresh rosemary, and ½ teaspoon black pepper.
  2. Add 1.5 lbs of 1-inch cubed lamb to the marinade. Cover and refrigerate for at least 4 hours, or preferably overnight.
  3. Thread lamb cubes onto skewers, alternating with 1 cup of cubed red onion and 1 cup of cubed bell pepper (any color).
