How to Make Apricot Pork Medallions

  1. Flatten pork tenderloin pieces to about 1/2-inch thickness.
  2. Melt 1 tablespoon butter in a large skillet over medium-high heat.
  3. Season pork medallions with salt and pepper. Sear for 2-3 minutes per side, until browned.
