  • Ground Lamb
  • Onion
  • Tomatoes
  • Garlic Cloves
  • 1 tsp salt
  • Mixed Spice
  • Fresh Parsley
  • 1 tbsp lemon juice
  • Pine Nuts
  • Olive Oil
  • Flat Bread

How to Make Arayes Mini Meat Calzones

  1. Preheat oven to 350°F (180°C).
  2. In a large bowl, combine 1 lb ground lamb, 1/2 cup finely chopped onion, 1/2 cup chopped tomato, 2 cloves crushed garlic, 1 tsp salt, 2 tbsp baharat spice mix (recipe #224763), 1/4 cup chopped fresh parsley, 1 tbsp lemon juice, and 1/4 cup toasted pine nuts. Mix thoroughly.
  3. Cut a loaf of pita bread (or similar flatbread) into 8 quarters.
  4. Open each pita quarter and spread a generous tablespoon of the lamb mixture onto one half. Fold the other half over to create a half-moon shape and gently press the edges to seal.
  5. Brush both sides of each calzone with 1 tbsp olive oil.
  6. Arrange the calzones on a baking sheet and bake for 30 minutes in the center of the oven, flipping them halfway through (at 15 minutes).
  7. Serve warm with hummus, your favorite Arabic salad, and/or pickles.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
