How to Make Argentina Style Beef Stew

  1. Fry 4 slices of bacon in a large skillet over medium heat until crisp. Remove bacon to a paper towel-lined plate to drain.
  2. Crumble bacon and set aside to chill until serving time.
  3. Add 1.5 lbs beef stew meat to the hot bacon drippings in the skillet. Brown on all sides.
  4. Drain off excess fat from the skillet.
  5. In a 6-quart slow cooker, combine: 2 large carrots (chopped), 1 large onion (chopped), 1 (28 ounce) can crushed tomatoes, 2 lbs potatoes (peeled and cubed), 1 medium butternut squash or pumpkin (peeled, seeded, and cubed), 1 medium sweet pepper (chopped), 1 tbsp dried thyme, and 4 cloves garlic (minced).
  6. Add the browned beef to the slow cooker.
  7. Pour 4 cups beef broth over the meat and vegetables.
  8. Cover and cook on low for 8-10 hours, or until the beef is very tender.
  9. Turn the slow cooker to high.
