Ingredients for Armenian Potatoes
- 1.5 lbs potatoes (about 5 medium), peeled and cut into 1-inch chunks
- 1 large onion, peeled and cut into 1-inch chunks
- Vegetable Oil
- 2 tablespoons tomato paste
- 1/2 cup water
- 1 tablespoon paprika
- 1 teaspoon salt (or to taste)
- Black pepper, to taste
- Fresh Parsley
How to Make Armenian Potatoes
- Preheat oven to 325°F (160°C).
- Peel and cut the potatoes and onion into 1-inch chunks.
- In a large bowl, whisk together the olive oil, tomato paste, water, salt, and paprika.
- Add the potatoes and onions to the bowl. Season with black pepper and toss to coat evenly.
- Stir in the chopped parsley.
- Transfer the potato mixture to a greased baking dish. Cover the dish tightly with foil or a lid.
- Bake for 45-50 minutes, or until the potatoes are tender and easily pierced with a fork. If using a foil cover, remove the foil during the last 10 minutes of baking to allow the top to brown slightly.
- Serve hot and enjoy!
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
