How to Make 15 Minute Beef Stew
- Season 1 lb beef stew cubes generously with salt and pepper.
- Heat 1 tablespoon olive oil in a large (12-inch) nonstick skillet over medium-high heat. Brown the beef cubes in batches, ensuring not to overcrowd the pan. Set aside.
- Add 1 medium onion (chopped), 2 carrots (chopped), and 2 celery stalks (chopped) to the skillet. Sauté for 5 minutes, until softened.
- Stir in 1 tbsp tomato paste and cook for 1 minute.
- Return the browned beef to the skillet. Add 1 cup beef broth, 1 (10.75 ounce) can condensed beef broth, 1 teaspoon dried thyme, 1/2 teaspoon dried rosemary, and 1 bay leaf.
- Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 10-15 minutes, or until the beef is tender.
- Remove bay leaf before serving. Garnish with fresh parsley (optional).
