How to Make Asian Style Meatloaf
- Preheat oven to 350°F (175°C). In a large bowl, gently combine 1 lb ground beef, 1/2 lb ground pork, 1 cup breadcrumbs, 2 large eggs, 1/2 cup finely chopped onion, and 1/2 cup finely chopped celery.
- Stir in 3 tablespoons soy sauce, 1 tablespoon grated fresh ginger (or 1 teaspoon ground ginger), and 2 tablespoons hoisin sauce. Season generously with salt and pepper to taste.
- Pat the meatloaf mixture into a shallow 2-quart baking pan (approximately 8x8 inches).
- Bake in the preheated oven for 40 minutes.
- Carefully remove the meatloaf from the oven and drain off any excess grease from the baking pan.
- In a small bowl, whisk together 1/2 cup hoisin sauce and 2 tablespoons ketchup until smooth.
- Spread the hoisin-ketchup glaze evenly over the top of the meatloaf.
- Return the meatloaf to the oven and continue baking for another 20 minutes, or until the internal temperature reaches 160°F (71°C).
- Remove from oven and let rest for 5 minutes before slicing and serving.
