How to Make Bean Bake Casserole

  1. Preheat oven to 325°F (160°C).
  2. Grease a 9x13 inch casserole dish.
  3. In a large Dutch oven or skillet, cook 4 slices of bacon until crisp. Remove bacon and crumble, reserving 2 tablespoons of bacon grease.
  4. Add 1 pound ground beef and 1 pound ground pork to the Dutch oven. Add 1 medium onion (chopped), 2 cloves garlic (minced), and 2 celery stalks (chopped). Brown the meat, breaking it up with a spoon.
  5. Drain off excess grease, reserving 2 tablespoons.
  6. Stir in 1 (15 ounce) can of kidney beans (drained and rinsed), 1 (15 ounce) can of pinto beans (drained and rinsed), 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can tomato sauce, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and a dash of Tabasco sauce (to taste).
  7. Combine well, slightly mashing the tomatoes with a fork.
  8. Pour mixture into the prepared casserole dish.
  9. Bake uncovered for 1 hour and 15 minutes.
  10. Remove from oven and sprinkle with 1 cup shredded cheddar cheese.
  11. Return to oven and bake for an additional 15 minutes, or until cheese is melted and bubbly.
