How to Make Bacon Cheeseburger Meatloaf
- Preheat oven to 350°F (175°C).
- In a large bowl, combine 1.5 lbs ground beef, 0.5 lbs ground pork, 1 cup finely chopped onion, 1 cup shredded cheddar cheese, 6 slices cooked and crumbled bacon, 1/2 cup bread crumbs, 1/4 cup milk, 1 large egg, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix thoroughly.
- In a small bowl, whisk together 1/2 cup ketchup and 2 tablespoons yellow mustard.
- Stir 1/4 cup of the ketchup-mustard mixture into the meat mixture, reserving the remaining mixture.
- Press the meat mixture into a greased 9x5x3 inch loaf pan, or shape into a loaf and place on a wire rack set inside a roasting pan.
- Spread the remaining ketchup-mustard mixture evenly over the top of the meatloaf.
- Bake for 45 minutes.
- Top with 1 cup French fried onions.
- Bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C) and the meat is no longer pink.
