How to Make Asparagus With Bacon
- Preheat oven to 400°F (200°C).
- Cook 12 slices of bacon until crispy. Remove from pan and place on paper towels to drain, reserving 2 tablespoons of bacon grease.
- Snap off the tough ends of 1 pound of asparagus.
- Steam asparagus for 4-6 minutes, or until tender-crisp.
- While asparagus steams, finely chop 1/2 medium yellow onion.
- In a large skillet or wok, melt 1 tablespoon of butter in the reserved bacon grease over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes.
- Add the steamed asparagus to the skillet and sauté for 3-4 minutes, turning occasionally.
- In a small bowl, whisk together 2 tablespoons Dijon mustard, 1 tablespoon white wine vinegar, and a pinch of salt and pepper.
- Add the Dijon mixture to the asparagus and toss to coat.
- Divide the asparagus into 4 equal portions. Wrap each portion with 3 slices of cooked bacon.
- Place the bacon-wrapped asparagus bundles on a baking sheet and bake for 5-7 minutes, or until the bacon is heated through and the asparagus is tender.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
