Ingredients for Asparagus With Bacon

  • 12 slices bacon
  • Red Onion
  • 1 tablespoon butter
  • 1 pound asparagus
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white wine vinegar
  • Salt And Pepper

How to Make Asparagus With Bacon

  1. Preheat oven to 400°F (200°C).
  2. Cook 12 slices of bacon until crispy. Remove from pan and place on paper towels to drain, reserving 2 tablespoons of bacon grease.
  3. Snap off the tough ends of 1 pound of asparagus.
  4. Steam asparagus for 4-6 minutes, or until tender-crisp.
  5. While asparagus steams, finely chop 1/2 medium yellow onion.
  6. In a large skillet or wok, melt 1 tablespoon of butter in the reserved bacon grease over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes.
  7. Add the steamed asparagus to the skillet and sauté for 3-4 minutes, turning occasionally.
  8. In a small bowl, whisk together 2 tablespoons Dijon mustard, 1 tablespoon white wine vinegar, and a pinch of salt and pepper.
  9. Add the Dijon mixture to the asparagus and toss to coat.
  10. Divide the asparagus into 4 equal portions. Wrap each portion with 3 slices of cooked bacon.
  11. Place the bacon-wrapped asparagus bundles on a baking sheet and bake for 5-7 minutes, or until the bacon is heated through and the asparagus is tender.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
