  • 1/2 medium onion, chopped

How to Make Bacon And Eggs In A Bread Bowl Panera Bread

  1. Preheat oven to 350°F (175°C). Line a baking sheet with foil.
  2. Cook 4 slices of chopped bacon in a large skillet until crisp (5-7 minutes). Remove bacon to paper towels to drain. Reserve 1 teaspoon of bacon fat in the skillet.
  3. Add 1/2 medium onion, chopped, to the skillet and cook until soft and golden (4-6 minutes).
  4. Add 1 cup of fresh spinach, cover, and cook until wilted (2-3 minutes), stirring occasionally.
  5. Drain any excess water and transfer the onion and spinach mixture to a mixing bowl.
  6. In the mixing bowl, combine: 6 large eggs (beaten), cooked bacon (from step 2), 1/2 cup ricotta cheese, 6 tablespoons grated Parmesan cheese (reserve 3 tablespoons for topping), 1 teaspoon dried oregano, salt and pepper to taste, and a pinch of cayenne pepper.
  7. Stir gently until everything is well combined.
  8. Cut the tops off two Panera Bread sourdough bread bowls (or your favorite large sourdough bread bowls), creating a jack-o'-lantern shape. Remove the bread from the inside, leaving about a 1/2-inch shell of crust. Save or freeze the removed bread for another use (breadcrumbs or croutons).
  9. Place the bread bowls on the prepared baking sheet.
  10. Scrape the egg mixture into the bread bowls and sprinkle with the remaining 3 tablespoons of Parmesan cheese.
