How to Make Bacon And Eggs In A Bread Bowl Panera Bread
- Preheat oven to 350°F (175°C). Line a baking sheet with foil.
- Cook 4 slices of chopped bacon in a large skillet until crisp (5-7 minutes). Remove bacon to paper towels to drain. Reserve 1 teaspoon of bacon fat in the skillet.
- Add 1/2 medium onion, chopped, to the skillet and cook until soft and golden (4-6 minutes).
- Add 1 cup of fresh spinach, cover, and cook until wilted (2-3 minutes), stirring occasionally.
- Drain any excess water and transfer the onion and spinach mixture to a mixing bowl.
- In the mixing bowl, combine: 6 large eggs (beaten), cooked bacon (from step 2), 1/2 cup ricotta cheese, 6 tablespoons grated Parmesan cheese (reserve 3 tablespoons for topping), 1 teaspoon dried oregano, salt and pepper to taste, and a pinch of cayenne pepper.
- Stir gently until everything is well combined.
- Cut the tops off two Panera Bread sourdough bread bowls (or your favorite large sourdough bread bowls), creating a jack-o'-lantern shape. Remove the bread from the inside, leaving about a 1/2-inch shell of crust. Save or freeze the removed bread for another use (breadcrumbs or croutons).
- Place the bread bowls on the prepared baking sheet.
- Scrape the egg mixture into the bread bowls and sprinkle with the remaining 3 tablespoons of Parmesan cheese.
- Bake for 45-55 minutes, or until the filling is set and a toothpick inserted in the center comes out clean. Do not include the bread tops during baking.
- Let cool for 10 minutes before serving.
- Using a serrated knife, cut each bread bowl into 3 wedges.
