Ingredients for Aussie Bushman S Brekkie Breakfast For Two

  • Lamb Loin Chops
  • 2 sausages
  • 4 rashers of bacon
  • 200g sliced mushrooms
  • Tomatoes
  • Cheddar Cheese
  • 1 tablespoon oil
  • 2 eggs

How to Make Aussie Bushman S Brekkie Breakfast For Two

  1. Trim excess fat from 2 lamb chops (approx. 150g total). Pierce 2 sausages with a fork.
  2. Preheat grill to high. Lightly oil a grill tray. Place lamb chops and sausages on the tray. Grill for 2 minutes per side, then continue cooking until the lamb reaches your desired doneness (approx. 4-6 minutes total for medium-rare).
  3. While the lamb and sausages cook, fry 4 rashers of bacon in a pan over medium heat until crispy. Remove and set aside, keeping warm.
  4. Add 200g sliced mushrooms to the bacon pan and cook until browned. Remove and keep warm.
  5. Cut 1 large tomato in half. Place cut-side down on the grill tray with the lamb and sausages for the last 2 minutes of their cooking time. Sprinkle with 20g grated cheese and continue cooking until the tomato is tender.
  6. About 3 minutes before serving, heat 1 tablespoon of oil in a frying pan over low heat. Cook 2 eggs to your liking.
  7. Serve the lamb chops, sausages, bacon, mushrooms, and tomato immediately with the fried eggs. Serve with toasted bread (optional) and a cup of hot, strong tea!

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
