  • King Prawns
  • 1 dozen Tasmanian oysters

How to Make Australian Seafood Platter

  1. Cut 2 (1-pound) lobsters in half lengthwise.
  2. Gently remove the lobster meat from the tails in one piece, using your fingers.
  3. Wash 2 lobster shells. Slice the lobster meat evenly, toss with 1 tablespoon lemon juice, and pile the meat back into the shells.
  4. Arrange the lobster shells on a large serving platter.
  5. Shell 1 pound of prawns, remove the back vein, and place them on the platter.
  6. Sprinkle a teaspoon of red caviar on each of 1 dozen Tasmanian oysters. Arrange the oysters on the platter.
  7. Roll up 6 ounces of Tasmanian salmon, place it on the serving platter, and garnish with a tablespoon of capers and 2 thinly sliced red onion rings.
