How to Make Autumn Melange Of Pumpkin Vegetables And Fruit
- Melt 2 tablespoons of butter in a large, oven-safe skillet or Dutch oven over medium heat.
- Add 1.5 lbs of cubed pumpkin and sauté for 5 minutes, ensuring all sides are coated in butter.
- Push the pumpkin to one side of the pan and reduce heat to medium-low.
- Add 2 stalks celery (finely chopped), 1 medium onion (finely chopped), and 2 cloves garlic (minced) and cook for 3-5 minutes, until softened, stirring occasionally.
- Add 2 medium apples (peeled, cored, and diced) and toss to combine with the other vegetables and accumulated juices.
- Pour in 1 ½ cups of apple cider and add ½ cup fresh or frozen cranberries. Bring to a simmer, then reduce heat to low, cover, and cook for 12-15 minutes, or until the pumpkin is tender, stirring occasionally.
- Most of the liquid should have reduced. If it's too watery, remove the lid and continue to simmer until it reaches your desired consistency.
- Stir in ½ cup of walnuts (roughly chopped), 1 teaspoon of ground ginger, and ¼ cup of fresh parsley (chopped).
- Season generously with salt and pepper to taste. Serve warm with crusty bread and your favorite beverage.
