Ingredients for Avocado Quesadillas
- 1 cup diced tomatoes
- 1 ripe avocado, mashed
- Red Onion
- Fresh Lemon Juice
- Tabasco Sauce
- 1/2 cup sour cream
- Fresh Cilantro
- Flour Tortillas
- Vegetable Oil
- Monterey Jack Cheese
How to Make Avocado Quesadillas
- Preheat your broiler.
- In a medium bowl, gently mash the avocado. Stir in the diced tomatoes, red onion, lemon juice, Tabasco sauce, salt, and pepper. Mix well.
- In a small bowl, combine the sour cream, cilantro, salt, and pepper. Mix until well combined.
- Lightly brush one side of each tortilla with olive oil.
- Place the tortillas, oiled-side up, on a baking sheet lined with foil or parchment paper. Place on a rack 2-4 inches from the broiler element.
- Broil for 1-2 minutes, or until lightly golden brown. Flip and broil for another 1-2 minutes on the other side.
- Remove from broiler and evenly sprinkle half of the shredded cheese over two of the tortillas.
- Spread half of the avocado mixture evenly over the two tortillas with cheese. Top each with a remaining tortilla, cheese-side down.
- Broil for another 2-3 minutes, or until the cheese is melted, bubbly, and the tortillas are lightly golden. Watch carefully to prevent burning.
- Remove from the broiler, let cool slightly, and cut each quesadilla into 8 wedges. Serve immediately with the cilantro-lime sour cream.
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
