Ingredients for Avocado Quesadillas

  • 1 cup diced tomatoes
  • 1 ripe avocado, mashed
  • Red Onion
  • Fresh Lemon Juice
  • Tabasco Sauce
  • 1/2 cup sour cream
  • Fresh Cilantro
  • Flour Tortillas
  • Vegetable Oil
  • Monterey Jack Cheese

How to Make Avocado Quesadillas

  1. Preheat your broiler.
  2. In a medium bowl, gently mash the avocado. Stir in the diced tomatoes, red onion, lemon juice, Tabasco sauce, salt, and pepper. Mix well.
  3. In a small bowl, combine the sour cream, cilantro, salt, and pepper. Mix until well combined.
  4. Lightly brush one side of each tortilla with olive oil.
  5. Place the tortillas, oiled-side up, on a baking sheet lined with foil or parchment paper. Place on a rack 2-4 inches from the broiler element.
  6. Broil for 1-2 minutes, or until lightly golden brown. Flip and broil for another 1-2 minutes on the other side.
  7. Remove from broiler and evenly sprinkle half of the shredded cheese over two of the tortillas.
  8. Spread half of the avocado mixture evenly over the two tortillas with cheese. Top each with a remaining tortilla, cheese-side down.
  9. Broil for another 2-3 minutes, or until the cheese is melted, bubbly, and the tortillas are lightly golden. Watch carefully to prevent burning.
  10. Remove from the broiler, let cool slightly, and cut each quesadilla into 8 wedges. Serve immediately with the cilantro-lime sour cream.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
