How to Make Awesome Sweet And Sour Kraut
- In a small bowl, whisk together 1 tbsp salt, 1 tsp caraway seeds, 1 tsp celery seeds, and 1/2 tsp black pepper.
- Heat 2 tbsp olive oil in a 6-quart pot over high heat until shimmering, about 4 minutes. Do not let the oil smoke.
- Add 1 large onion, thinly sliced, and cook, stirring occasionally, until softened and lightly browned, about 8 minutes.
- Add 1 medium head of green cabbage (about 2 lbs), finely shredded, 2 medium sweet apples (Gala or Braeburn) cored and diced, 2 cloves garlic, minced, and 1 inch piece of ginger, minced. Cook, stirring frequently, for 4 minutes.
