Ingredients for Bacon And Maple Grits Puff

  • 6 slices bacon
  • 4 cups milk
  • Water
  • Quick Cooking Grits
  • 1/2 teaspoon salt
  • Real Maple Syrup
  • 2 large eggs

How to Make Bacon And Maple Grits Puff

  1. Preheat oven to 350°F (175°C).
  2. Grease a 1 1/2-quart round casserole or soufflé dish.
  3. Cook 6 slices of bacon in a large skillet over medium heat for about 7 minutes, until crispy.
  4. Remove bacon to a paper towel-lined plate to drain. Set aside, reserving 2 tablespoons of bacon drippings.
  5. In a medium saucepan, whisk together 4 cups of milk, 1 cup of coarse ground grits, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  6. Bring to a boil over medium heat, stirring frequently. Reduce heat and simmer for 2-3 minutes, or until the mixture has thickened considerably and is creamy, stirring constantly.
  7. Remove from heat and stir in 1/4 cup of real maple syrup and the reserved 2 tablespoons of bacon drippings.
  8. Crumble the cooked bacon and add it to the grits mixture.
  9. In a medium bowl, whisk 2 large eggs lightly.
  10. Gradually whisk a small amount of the warm grits mixture into the eggs to temper them, then pour the egg mixture into the remaining grits mixture and stir to combine.
  11. Pour the grits mixture into the prepared casserole dish.
  12. Bake for 1 hour and 20 minutes, or until the puff is set and golden brown.
  13. Let cool slightly before serving. Serve immediately with additional maple syrup and fresh fruit, such as berries or sliced bananas.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
