How to Make Bacon Caramelized Onion Asparagus

  1. Cook 4 slices of bacon in a nonstick skillet over medium heat for 3-5 minutes, or until crisp, turning frequently.
  2. Remove bacon from skillet and place on a paper towel-lined plate to drain. Reserve 1 tablespoon of bacon grease in the skillet.
  3. Add 1 cup of thinly sliced onions to the skillet with the reserved bacon grease. Cook and stir for 5-7 minutes, or until softened and caramelized.
  4. While onions caramelize, snap off the tough ends of 1 pound of asparagus and place in a microwave-safe dish. Add 2 tablespoons of water.
  5. Microwave asparagus on high for 4-5 minutes, or until crisp-tender.
  6. In a small bowl, whisk together 2 tablespoons of balsamic vinegar, 1 tablespoon of olive oil, and 1/4 teaspoon of salt.
  7. Drain the asparagus and add it to the skillet with the caramelized onions.
  8. Pour the balsamic vinaigrette over the asparagus and onions, tossing gently to coat.
  9. Crumble the cooked bacon and sprinkle over the asparagus mixture.
  10. Serve immediately.
