How to Make Baked Chicken
- Preheat oven to 425°F (220°C). Melt 1/4 cup butter or margarine in a large roasting pan.
- In a heavy-duty plastic bag, combine 2 cups all-purpose flour, 1 tablespoon paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Add chicken pieces (about 2 lbs), a few at a time, to the bag. Shake until evenly coated.
- Arrange chicken in the roasting pan, skin-side down, on top of the melted butter.
- Bake for 30 minutes.
- Flip chicken pieces and bake for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
- Remove chicken from oven. Let rest for 5 minutes before serving. Make gravy using the pan drippings (remove excess fat first), leftover flour from the bag, and chicken stock as desired.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
