- Salmon Fillets
- 1/2 cup yellow onion, finely chopped
- 4 slices bacon, chopped

How to Make Baked Salmon With Tarragon And Bacon
- Preheat oven to 400°F (200°C).
- Butter one side of a large (approximately 18x12 inch) sheet of aluminum foil.
- Place the buttered foil in a baking dish large enough to hold the salmon fillets.
- In a medium frypan, melt 1 tablespoon of butter over medium heat. Add 1/2 cup finely chopped yellow onion and cook until soft and golden, about 5 minutes.
- Add 4 slices of bacon, chopped, and 1 tablespoon of fresh tarragon, chopped, to the pan. Cook for another 2 minutes, until bacon is slightly crispy.
- Stir in 1 tablespoon of fresh lemon juice and remove from heat.
- Place 2 (6-ounce) salmon fillets on the prepared foil in the baking dish.
- Evenly distribute the onion and bacon mixture over the salmon fillets. Drizzle any remaining pan juices over the salmon.
- Fold the foil over the fish, creating a sealed parcel.
- Bake for 15-20 minutes, or until the salmon flakes easily with a fork.
