Ingredients for Baked Sea Bass With Vegetables

  • 2 (6-ounce) sea bass fillets, or other firm white fish fillets
  • Onion
  • Garlic Cloves
  • 1 cup chopped tomatoes (fresh or canned)
  • 1 pound small red potatoes, scrubbed and halved
  • Lemon
  • 1/2 cup water
  • 4 tablespoons olive oil
  • Red pepper flakes to taste (optional)
  • Salt & Fresh Ground Pepper
  • Italian Parsley
  • Lemon wedges, for serving

How to Make Baked Sea Bass With Vegetables

  1. Preheat oven to 350°F (175°C).
  2. Boil potatoes in salted water for 10 minutes, until slightly tender. Drain and let cool.
  3. Once cool enough to handle, thinly slice the potatoes.
  4. While potatoes boil, heat 2 tablespoons of olive oil in a large skillet over medium heat.
  5. Add chopped onions and cook until softened, about 3-4 minutes.
  6. Stir in minced garlic and chopped tomatoes. Cook for another 3 minutes.
  7. Pour in 1/2 cup water and 2 tablespoons lemon juice. Season with salt and pepper.
  8. Simmer gently for 2 minutes. Remove from heat and let cool slightly.
  9. Grease a baking dish with the remaining 2 tablespoons olive oil.
  10. Arrange the fish fillets and potato slices in the prepared baking dish. Drizzle with olive oil and season with salt and pepper.
