Ingredients for Baked Sea Bass With Vegetables
- 2 (6-ounce) sea bass fillets, or other firm white fish fillets
- Onion
- Garlic Cloves
- 1 cup chopped tomatoes (fresh or canned)
- 1 pound small red potatoes, scrubbed and halved
- Lemon
- 1/2 cup water
- 4 tablespoons olive oil
- Red pepper flakes to taste (optional)
- Salt & Fresh Ground Pepper
- Italian Parsley
- Lemon wedges, for serving
How to Make Baked Sea Bass With Vegetables
- Preheat oven to 350°F (175°C).
- Boil potatoes in salted water for 10 minutes, until slightly tender. Drain and let cool.
- Once cool enough to handle, thinly slice the potatoes.
- While potatoes boil, heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add chopped onions and cook until softened, about 3-4 minutes.
- Stir in minced garlic and chopped tomatoes. Cook for another 3 minutes.
- Pour in 1/2 cup water and 2 tablespoons lemon juice. Season with salt and pepper.
- Simmer gently for 2 minutes. Remove from heat and let cool slightly.
- Grease a baking dish with the remaining 2 tablespoons olive oil.
- Arrange the fish fillets and potato slices in the prepared baking dish. Drizzle with olive oil and season with salt and pepper.
- Spread the tomato-onion mixture evenly over the fish and potatoes.
- Cover the baking dish with aluminum foil.
- Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove foil and sprinkle with chopped parsley and red pepper flakes (if using).
- Serve immediately with lemon wedges.
