How to Make Baked Stuffed Lobster
- Bring a large pot of salted water to a boil. Add 1 (1.5-2 lb) live lobster and parboil for 7 minutes.
- Remove lobster from boiling water and immediately place in an ice bath to stop the cooking process. Once cooled, pat dry.
- Using a sharp, sturdy chef's knife, carefully slice down the center of the lobster, starting at the head and continuing through the tail.
- Gently open the lobster and remove the stomach and tomalley (the green substance – optional, but adds flavor!). Rinse thoroughly.
- Prepare your stuffing (see ingredient list for our simple recipe).
- Generously fill the lobster cavity with the prepared stuffing.
- Preheat oven to 450°F (232°C).
- Place the stuffed lobster on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the stuffing is golden brown and the lobster is heated through. Internal temperature should reach 145°F (63°C).
- Let rest for 5 minutes before serving. Remember to crack the claws with a nutcracker before serving!
