How to Make Baked Stuffed Pork Chops
- Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.
- Season 6 pork chops (about 1 inch thick) with salt and pepper.
- Brown pork chops for 2-3 minutes per side, until lightly golden.
- Remove pork chops from skillet and set aside.
- In a medium bowl, prepare 1 (6 ounce) box of stuffing mix according to package directions, using 1 1/2 cups of boiling water and 1/4 cup (1/2 stick) of melted butter.
- Let the stuffing sit for 5 minutes, then fluff with a fork.
- Stir in 1/2 cup of chicken broth and 1/4 cup of sour cream until well combined.
- Pour half of the stuffing mixture into the bottom of the skillet.
- Arrange the browned pork chops on top of the stuffing.
- Cover the pork chops with the remaining stuffing mixture.
- Bake, covered, in a preheated 350°F (175°C) oven for 45 minutes.
- Uncover and bake for an additional 15 minutes, or until the pork chops are cooked through and the stuffing is golden brown. Internal temperature of the pork chops should reach 145°F (63°C).
