How to Make Balsamic Thyme Chicken

  1. Preheat oven to 350°F (175°C).
  2. Spray a shallow one-quart baking dish with vegetable cooking spray.
  3. Heat 1 tablespoon of margarine in a medium nonstick skillet over medium-high heat.
  4. Add 2 boneless, skinless chicken breasts (about 6 ounces each) and cook until lightly browned on both sides, about 3-4 minutes per side.
  5. Transfer the chicken to the prepared baking dish.
  6. Pour 1/2 cup of chicken broth into the skillet. Add 1/2 cup chopped bell peppers (any color), 1/4 cup chopped onion, and 1 teaspoon fresh thyme leaves.
  7. Simmer for 10 minutes, stirring occasionally, until the vegetables are slightly softened.
  8. Remove the vegetables from the skillet with a slotted spoon and arrange them on top of the chicken in the baking dish.
  9. In a small bowl, whisk together 1/4 cup balsamic vinegar, 1 tablespoon brown sugar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  10. Pour the balsamic mixture into the skillet and bring to a boil. Reduce heat and simmer for 5 minutes, or until slightly thickened.
