How to Make Balsamic Thyme Chicken
- Preheat oven to 350°F (175°C).
- Spray a shallow one-quart baking dish with vegetable cooking spray.
- Heat 1 tablespoon of margarine in a medium nonstick skillet over medium-high heat.
- Add 2 boneless, skinless chicken breasts (about 6 ounces each) and cook until lightly browned on both sides, about 3-4 minutes per side.
- Transfer the chicken to the prepared baking dish.
- Pour 1/2 cup of chicken broth into the skillet. Add 1/2 cup chopped bell peppers (any color), 1/4 cup chopped onion, and 1 teaspoon fresh thyme leaves.
- Simmer for 10 minutes, stirring occasionally, until the vegetables are slightly softened.
- Remove the vegetables from the skillet with a slotted spoon and arrange them on top of the chicken in the baking dish.
- In a small bowl, whisk together 1/4 cup balsamic vinegar, 1 tablespoon brown sugar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Pour the balsamic mixture into the skillet and bring to a boil. Reduce heat and simmer for 5 minutes, or until slightly thickened.
- Pour the balsamic sauce over the chicken and vegetables in the baking dish.
- Cover the baking dish and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
