How to Make Banana Apricot And Date Loaf

  1. Combine 1 cup sugar, ½ cup water, 1 cup chopped dates, ½ cup chopped dried apricots, ½ cup butter, and 1 teaspoon baking soda in a saucepan.
  2. Stir over low heat until butter and sugar are completely melted and the dates and apricots are softened. Remove from heat.
  3. In a separate large bowl, whisk together 2 cups all-purpose flour, 2 mashed ripe bananas, and 2 large eggs.
  4. Gradually add the warm date and apricot mixture to the wet ingredients, stirring until just combined. Do not overmix.
  5. Grease and flour two 9x5 inch loaf pans. Divide the batter evenly between the prepared pans.
  6. Bake at 190°C (375°F) for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

  8. Freezes exceptionally well! Wrap individual slices tightly in plastic wrap and then foil for optimal freezer storage.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
