How to Make Banana Nut Matzoh Kugel

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch square baking dish.
  2. Place 8-10 matzah pieces in a large bowl and pour 2 cups of cold water over them. Let soak for 1 minute.
  3. Immediately drain the matzah in a colander, pressing out excess water.
  4. In a large bowl, beat 4 large eggs with 1/2 cup honey and 1/4 cup melted unsalted butter until light and fluffy.
  5. Add the drained matzah to the egg mixture and gently mix until well combined. Do not overmix.
  6. Spread half of the matzah mixture evenly in the prepared baking dish.
  7. Arrange 2-3 ripe bananas, sliced, over the matzah mixture.
  8. Sprinkle 1/2 cup chopped walnuts or pecans over the bananas.
  9. Top with the remaining matzah mixture, spreading evenly.
  10. Dust the top with 1 teaspoon ground cinnamon.
  11. Bake for 45-55 minutes, or until the kugel is golden brown and set. Let cool slightly before serving.
