How to Make Banana Raisin Oatmeal Pancakes

  1. In a medium bowl, whisk together 1 ½ cups all-purpose flour, ½ cup rolled oats, ½ cup granulated sugar, 2 teaspoons baking powder, 1 teaspoon baking soda, and ½ teaspoon salt.
  2. In a separate medium bowl, whisk together 1 cup plain yogurt, ½ cup milk, 2 large eggs, and 1 teaspoon vanilla extract.
  3. Gently whisk the dry ingredients (from step 1) into the wet ingredients (from step 2) until just combined. Do not overmix.
  4. Fold in 2 ripe mashed bananas, ½ cup raisins, and ¼ cup melted unsalted butter.
