- 2 lbs beef stew meat
- Cooking Oil
- 1 large onion, chopped
- Garlic Clove
- 1 (13.5 oz) can full-fat coconut milk
- 1 (14.5 oz) can undrained crushed tomatoes
- 1 tsp salt
- Ground Coriander
- Frozen Cut Green Beans
- Long Grain Rice
- Unsalted Peanuts
How to Make Beef Pilau
- Brown 2 lbs beef stew meat in batches in a large Dutch oven with 2 tbsp hot oil. Remove and set aside, reserving drippings.
- Add 1 large chopped onion and 4 cloves minced garlic to the Dutch oven and cook in the reserved drippings until softened but not browned (about 5 minutes).
- Return the browned beef to the Dutch oven.
- Drain off any excess fat.
- Pour in 1 (13.5 oz) can full-fat coconut milk, 1 (14.5 oz) can undrained crushed tomatoes, 1 tsp salt, and 2 tbsp ground coriander.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1 hour.
- Stir in 1 cup green beans (or 1 cup sliced okra), 1 cup long-grain rice, and 1/2 cup roasted unsalted peanuts.
- Continue to simmer, covered, for 25-30 minutes, or until the liquid is absorbed and the meat and rice are tender.
