  • 2 lbs beef stew meat
  • Cooking Oil
  • 1 large onion, chopped
  • Garlic Clove
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 (14.5 oz) can undrained crushed tomatoes
  • 1 tsp salt
  • Ground Coriander
  • Frozen Cut Green Beans
  • Long Grain Rice
  • Unsalted Peanuts

How to Make Beef Pilau

  1. Brown 2 lbs beef stew meat in batches in a large Dutch oven with 2 tbsp hot oil. Remove and set aside, reserving drippings.
  2. Add 1 large chopped onion and 4 cloves minced garlic to the Dutch oven and cook in the reserved drippings until softened but not browned (about 5 minutes).
  3. Return the browned beef to the Dutch oven.
  4. Drain off any excess fat.
  5. Pour in 1 (13.5 oz) can full-fat coconut milk, 1 (14.5 oz) can undrained crushed tomatoes, 1 tsp salt, and 2 tbsp ground coriander.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 1 hour.
  8. Stir in 1 cup green beans (or 1 cup sliced okra), 1 cup long-grain rice, and 1/2 cup roasted unsalted peanuts.
