How to Make Bananas Baked With Custard
- Preheat oven to 190°C (375°F). Grease a medium-sized (approximately 8x8 inch) baking dish with butter.
- Peel 3 ripe bananas and slice them into 1/2-inch thick rounds.
- In the prepared baking dish, create layers: start with a layer of 4 slices of bread (challah or brioche work well), followed by a layer of sliced bananas and 1/4 cup of sultanas (golden raisins). Repeat layers ending with a layer of bread.
- In a small saucepan, gently heat 2 cups of whole milk over medium heat until warm. Do not boil.
- In a separate bowl, whisk together 3 large eggs, 3 large egg yolks, and 1/2 cup granulated sugar until light and frothy.
- Slowly pour the warm milk into the egg mixture, whisking constantly to prevent scrambling. Strain the mixture through a fine-mesh sieve for a smoother custard.
- Pour the custard mixture evenly over the bread and banana layers in the baking dish. Let it sit for 30 minutes to allow the bread to absorb some of the custard.
- Sprinkle the top of the pudding generously with freshly grated nutmeg.
