  • 1/2 cup dry white wine

How to Make Barbara S Chicken Dish

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 1 lb boneless, skinless chicken breasts (cut into 1-inch pieces) and 1 medium onion (chopped).
  3. Stir for 2 minutes until the chicken is lightly browned.
  4. Add 2 cloves of garlic (minced) and cook for another 2 minutes, until fragrant and the chicken is golden brown.
  5. Pour in 1/2 cup dry white wine, scraping up any browned bits from the bottom of the pan.
  6. Add 1 (14.5 ounce) can of diced tomatoes, undrained.
  7. Stir in 1/2 cup of chicken stock (or water), or 1 cup of flavorful chicken stock if preferred.
  8. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  9. Season generously with salt and freshly cracked black pepper to taste. Turn off the heat and cover.
  10. When ready to serve, gently reheat. Stir in 1/2 cup of light sour cream (the sauce may separate slightly, but it still tastes amazing!). Do not boil.
  11. Serve immediately over your favorite pasta and garnish with a fresh green salad.
