How to Make Barbara S Chicken Dish
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add 1 lb boneless, skinless chicken breasts (cut into 1-inch pieces) and 1 medium onion (chopped).
- Stir for 2 minutes until the chicken is lightly browned.
- Add 2 cloves of garlic (minced) and cook for another 2 minutes, until fragrant and the chicken is golden brown.
- Pour in 1/2 cup dry white wine, scraping up any browned bits from the bottom of the pan.
- Add 1 (14.5 ounce) can of diced tomatoes, undrained.
- Stir in 1/2 cup of chicken stock (or water), or 1 cup of flavorful chicken stock if preferred.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
- Season generously with salt and freshly cracked black pepper to taste. Turn off the heat and cover.
- When ready to serve, gently reheat. Stir in 1/2 cup of light sour cream (the sauce may separate slightly, but it still tastes amazing!). Do not boil.
- Serve immediately over your favorite pasta and garnish with a fresh green salad.
