- Preheat oven to 300°F (150°C). Place a 3-4 lb beef roast in a roasting pan. Add 1 cup beef broth to the bottom of the pan. Roast for 3-4 hours, or until the meat is fork-tender.
- While the roast cooks, prepare the sauce: Melt 4 tablespoons of butter in a medium skillet over medium heat.
- Add 4 cloves minced garlic to the skillet and sauté for 2-3 minutes, until fragrant.
- Stir in 1/2 cup ketchup, 1/4 cup brown sugar, 2 tablespoons apple cider vinegar, 1 tablespoon Worcestershire sauce, 1 teaspoon smoked paprika, 1/2 teaspoon onion powder, and 1/4 teaspoon black pepper.
- Continue cooking over medium heat, stirring frequently, until the sugar is melted and the sauce is well combined (about 5 minutes).
- Once the roast is cooked, remove it from the oven and let it rest for 10 minutes. Shred the beef using two forks.
- Add the shredded beef to the skillet with the sauce. Stir well to ensure all the beef is coated.
- Reduce heat to low and simmer for 20 minutes, allowing the flavors to meld.
- Serve the Barbecue Beef Suzanne on crusty rolls with potato salad and coleslaw. Enjoy!
