How to Make Barbecue Casserole

  1. Brown 1 lb ground beef in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add 1 medium onion, diced, and 4 slices bacon, diced, to the skillet. Cook until the onion is softened and the bacon is crispy, about 5-7 minutes.
  3. Stir the cooked ground beef back into the skillet with the onion and bacon. Keep warm.
  4. Pour 2 (15-ounce) cans of baked beans into a greased 9x13 inch casserole dish.
  5. Add 1/4 cup ketchup, 2 tablespoons yellow mustard, 2 tablespoons apple cider vinegar, and 2 tablespoons brown sugar to the baked beans. Stir well to combine.
  6. Add the ground beef mixture to the casserole dish with the baked beans. Stir gently to combine.
  7. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until heated through and bubbly.
  8. Remove from oven and top with 1 cup crushed corn chips and 1 cup shredded cheddar cheese.
  9. Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  10. Let stand for 5 minutes before serving. Serve immediately.
  11. Delicious served warm or cold!
  12. For a shortcut, substitute your favorite bottled BBQ sauce (about 1 cup) for the ketchup, mustard, vinegar, and brown sugar.
