  • Red Onion
  • 1 ripe avocado
  • 1 pint cherry or grape tomatoes
  • Cheddar Cheese
  • Boneless Skinless Chicken Breast
  • Salt
  • Fresh Coarse Ground Black Pepper
  • 1/4 cup barbecue sauce

How to Make Barbecue Chicken Cobb Salad

  1. Prepare the grill for medium heat.
  2. In a large bowl, combine 6 cups of chopped romaine lettuce.
  3. Wash and halve 1 medium cucumber; remove seeds and slice into half-moons. Cut the slices in half again.
  4. Thinly slice 1/2 medium red onion.
  5. Cut 1 ripe avocado in half, remove the pit, and dice the flesh.
  6. Dice 1 pint of cherry or grape tomatoes.
  7. Arrange cucumber, red onion, avocado, and tomatoes in diagonal rows on one side of the bowl, leaving a space in the center.
  8. Shred 1.5 cups of sharp cheddar cheese and arrange it in diagonal rows on the other side of the bowl.
  9. Cover the salad and refrigerate while you prepare the chicken.
  10. Cut 1.5 lbs boneless, skinless chicken breasts into 1-inch cubes.
  11. Thread chicken cubes onto four 12-inch skewers. Season generously with salt and pepper.
  12. Brush the chicken skewers generously with 1/4 cup of your favorite barbecue sauce.
  13. Grill the skewers for 10-12 minutes, turning occasionally and basting with additional barbecue sauce, until the chicken is cooked through and no longer pink inside.
  14. Remove the chicken skewers from the grill and let cool slightly.
  15. Remove the chicken from the skewers and arrange it down the center of the salad.
  16. Crumble 4-6 slices of cooked bacon over the salad (optional).
  17. Drizzle your favorite salad dressing over the salad.
  18. Toss gently to combine and serve immediately.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
