  • 2 tablespoons butter
  • 1 medium onion, chopped
  • Green Pepper
  • 2 cloves garlic, minced
  • Pearl Barley
  • Chicken Broth
  • Salt & Pepper

How to Make Barley Casserole

  1. Preheat oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a medium saucepan over medium heat. Add 1 medium onion (chopped), 1 green bell pepper (chopped), and 2 cloves garlic (minced). Sauté until softened, about 5-7 minutes.
  3. Spray a 9x13 inch ovenproof casserole dish with non-stick cooking spray.
  4. Transfer the vegetable mixture to the prepared casserole dish.
  5. Add 1 cup of barley, 2 cups of hot chicken broth, and stir well to coat the barley.
  6. Season generously with salt and pepper (about 1 teaspoon salt and ½ teaspoon black pepper). You can also add other herbs like thyme or rosemary (1 teaspoon).
  7. Cover the casserole dish with a lid or aluminum foil.
  8. Bake for 60-70 minutes, or until the barley is tender and the liquid is absorbed. If needed, add a splash of additional broth during baking to keep it moist.
