- 2 tablespoons butter

How to Make Barley Casserole
- Preheat oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a medium saucepan over medium heat. Add 1 medium onion (chopped), 1 green bell pepper (chopped), and 2 cloves garlic (minced). Sauté until softened, about 5-7 minutes.
- Spray a 9x13 inch ovenproof casserole dish with non-stick cooking spray.
- Transfer the vegetable mixture to the prepared casserole dish.
- Add 1 cup of barley, 2 cups of hot chicken broth, and stir well to coat the barley.
- Season generously with salt and pepper (about 1 teaspoon salt and ½ teaspoon black pepper). You can also add other herbs like thyme or rosemary (1 teaspoon).
- Cover the casserole dish with a lid or aluminum foil.
- Bake for 60-70 minutes, or until the barley is tender and the liquid is absorbed. If needed, add a splash of additional broth during baking to keep it moist.
- Remove from oven and let stand for 10 minutes before serving.
