  • Macadamia Nuts
  • 2 cups semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • ½ cup sweetened shredded coconut (plus extra for sprinkling)

  • 1 cup (2 sticks) unsalted butter
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • Dark Rum
  • 1 large egg

How to Make Aloha Chippers

  1. Preheat oven to 375°F (190°C).
  2. Line baking sheets with parchment paper.
  3. In a large bowl, cream together 1 cup (2 sticks) unsalted butter and ¾ cup granulated sugar and ¾ cup packed brown sugar until light and fluffy.
  4. Add 2 ¼ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt; mix until just combined.
  5. Beat in 1 large egg, 1 teaspoon vanilla extract, and 2 tablespoons of rum.
  6. Stir in 2 cups semi-sweet chocolate chips, 1 cup white chocolate chips, 1 cup chopped nuts (macadamia or pecans recommended), and ½ cup sweetened shredded coconut.
  7. Drop rounded teaspoons of cookie dough onto prepared baking sheets, leaving about 2 inches between each cookie.
  8. Sprinkle additional shredded coconut over the tops of the cookies.
  9. Bake for 8-10 minutes, or until edges are lightly golden brown and the centers are just set.
  10. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
