How to Make Aloha Chippers
- Preheat oven to 375°F (190°C).
- Line baking sheets with parchment paper.
- In a large bowl, cream together 1 cup (2 sticks) unsalted butter and ¾ cup granulated sugar and ¾ cup packed brown sugar until light and fluffy.
- Add 2 ¼ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt; mix until just combined.
- Beat in 1 large egg, 1 teaspoon vanilla extract, and 2 tablespoons of rum.
- Stir in 2 cups semi-sweet chocolate chips, 1 cup white chocolate chips, 1 cup chopped nuts (macadamia or pecans recommended), and ½ cup sweetened shredded coconut.
- Drop rounded teaspoons of cookie dough onto prepared baking sheets, leaving about 2 inches between each cookie.
- Sprinkle additional shredded coconut over the tops of the cookies.
- Bake for 8-10 minutes, or until edges are lightly golden brown and the centers are just set.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
