Ingredients for Barley Stir Fry
- Pearl Barley
- Canola Oil
- Red Onion
- Red Bell Pepper
- Fresh Shiitake Mushrooms
- 1 cup snow peas
- 2 scallions, chopped
- 1 tablespoon grated ginger
- 1/4 cup orange juice
- Reduced Sodium Soy Sauce
- Salt & Freshly Ground Black Pepper
How to Make Barley Stir Fry
- Bring 2 cups of water to a boil in a deep saucepan.
- Add 1 cup of barley to the boiling water.
- Reduce heat to low, cover, and simmer for 30-40 minutes, or until the barley is almost tender. Set aside.
- While the barley simmers, prepare the vegetables.
- Heat 1 tablespoon of oil in a medium non-stick skillet over high heat.
- Add 1/2 medium onion, chopped, and 1/2 red bell pepper, chopped, and stir-fry for 1 minute.
- Add 8 ounces of sliced mushrooms and stir-fry until they release their moisture, about 1 minute.
- Add 1 cup of snow peas, 2 scallions (chopped), and 1 tablespoon of grated ginger. Stir-fry for 15 seconds.
- Add the cooked barley, 1/4 cup of orange juice, 2 tablespoons of teriyaki sauce, and salt and pepper to taste.
- Cook until the barley is heated through and the flavors have melded, about 2-3 minutes.
- Serve the barley stir-fry immediately alongside grilled chicken breast and breadsticks. Enjoy!
