Ingredients for Barley Stir Fry

  • Pearl Barley
  • Canola Oil
  • Red Onion
  • Red Bell Pepper
  • Fresh Shiitake Mushrooms
  • 1 cup snow peas
  • 2 scallions, chopped
  • 1 tablespoon grated ginger
  • 1/4 cup orange juice
  • Reduced Sodium Soy Sauce
  • Salt & Freshly Ground Black Pepper

How to Make Barley Stir Fry

  1. Bring 2 cups of water to a boil in a deep saucepan.
  2. Add 1 cup of barley to the boiling water.
  3. Reduce heat to low, cover, and simmer for 30-40 minutes, or until the barley is almost tender. Set aside.
  4. While the barley simmers, prepare the vegetables.
  5. Heat 1 tablespoon of oil in a medium non-stick skillet over high heat.
  6. Add 1/2 medium onion, chopped, and 1/2 red bell pepper, chopped, and stir-fry for 1 minute.
  7. Add 8 ounces of sliced mushrooms and stir-fry until they release their moisture, about 1 minute.
  8. Add 1 cup of snow peas, 2 scallions (chopped), and 1 tablespoon of grated ginger. Stir-fry for 15 seconds.
  9. Add the cooked barley, 1/4 cup of orange juice, 2 tablespoons of teriyaki sauce, and salt and pepper to taste.
  10. Cook until the barley is heated through and the flavors have melded, about 2-3 minutes.
