- Peel and quarter 3 pounds Yukon Gold potatoes.
- Place potatoes in a 6-quart slow cooker. Add 4 cups of water to cover.

- Carefully drain the potatoes, reserving about 1/2 cup of the cooking liquid.
- Return potatoes to the slow cooker. Add 1/2 cup (1 stick) unsalted butter, 1/2 cup warm milk or cream, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Mash with a potato masher or electric mixer until smooth and creamy. Add reserved cooking liquid, 1 tablespoon at a time, until desired consistency is reached.
- Stir in 1/4 cup grated Parmesan cheese (optional).
