How to Make Beat The Blues Brownies
- Preheat oven to 160°C (320°F). Grease and line a 20 x 30 cm baking tin.
- Melt 200g dark chocolate and 100g unsalted butter in a heatproof bowl set over a pan of simmering water, stirring occasionally until smooth.
- Set aside to cool slightly.
- In a large bowl, whisk together 150g all-purpose flour, 50g unsweetened cocoa powder, and 1 tsp baking powder.
- Add 200g granulated sugar, 2 large eggs, and the cooled chocolate mixture to the dry ingredients.
- Stir gently until just combined. Do not overmix.
- Gently fold in 100g honeycomb pieces (broken into smaller pieces).
- Pour batter into the prepared tin and spread evenly.
- Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached. Do not overbake!
- Let cool completely in the tin before cutting into squares.
