- Heat 1 tablespoon olive oil in a large pan over medium heat. Add 1 large chopped onion and cook for about 5 minutes, stirring occasionally. Add 2 chopped carrots and cook for another 5 minutes.
- Transfer the vegetables to a large casserole dish. Add the soaked prunes and their soaking liquid.
- Add 1 teaspoon salt (or to taste).
- Add 1 tablespoon olive oil to the same pan and brown the beef on all sides. Add the browned beef to the casserole dish.
- Cover the casserole dish tightly.
- Cook in the preheated oven for 2.5 - 3 hours, or until the beef is incredibly tender.
Chef's Tip for Extra Flavor
Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
