How to Make Beef Stroganoff Carol's Way

  1. Trim any fat from 1.5 lbs of beef sirloin and sprinkle with 1 tbsp of meat tenderizer. Pierce the meat with a fork to allow the tenderizer to penetrate.
  2. Cut the beef across the grain into 1-inch strips.
  3. In a paper bag, dredge the beef strips with 1 tsp salt, 1/2 tsp black pepper, and 1/2 cup all-purpose flour.
  4. Melt 4 tbsp of butter in a large skillet over medium-high heat. Brown the floured beef in batches, ensuring not to overcrowd the pan. Set aside.
  5. Add 1 medium chopped onion and 2 minced garlic cloves to the skillet. Sauté until softened, about 5 minutes. Add 8 oz of sliced fresh mushrooms and sauté for another 3-5 minutes until lightly browned.
  6. Return the beef to the skillet. Pour in 1 cup of beef broth and 2 tbsp of Worcestershire sauce. Bring to a simmer, then reduce heat to low, cover, and cook for approximately 1 hour, or until the beef is tender.
  7. Just before serving, stir in 1 cup of sour cream. Heat through gently, being careful not to boil. Boiled sour cream can curdle.
  8. Serve immediately over 3 cups of cooked rice.
