How to Make Beer Brined Pork Chops
- In a saucepan, combine 12 oz beer, 1/2 cup brown sugar, 1/4 cup salt, 2 tablespoons black peppercorns, and 4 bay leaves. Bring to a simmer over medium heat, stirring until sugar and salt dissolve.
- Remove from heat and pour the brine into a large bowl. Add 2 cups of ice cubes to cool the brine rapidly.
- Add 4-6 pork chops (about 1 inch thick) to the brine, ensuring they are fully submerged. Refrigerate for at least 4 hours, or up to 12 hours.
- Preheat your grill to medium-high heat. Remove pork chops from brine and pat them dry with paper towels.
- Brush pork chops lightly with 1 tablespoon olive oil. Season generously with minced garlic (about 2 cloves) and freshly ground black pepper.
- Grill pork chops for 12-14 minutes per side, or until the internal temperature reaches 160°F (71°C) using a meat thermometer. Adjust grilling time based on thickness of chops.
- Let rest for 5 minutes before serving. Enjoy!
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
