How to Make Beliashi
- In a large bowl, combine ground meat, chopped onion, salt, pepper, and any desired additional herbs or spices. Mix well and set aside.
- Prepare the dough according to your preferred method (recipe not included, please use your favorite dough recipe or search for a suitable dough for pasties).
- Roll out the dough to a thickness of about 1/8 inch. Use a 4-inch cookie cutter or a knife to cut out circles.
- Place a spoonful of the meat filling in the center of each dough circle.
- Fold the dough over the filling to form a half-moon shape, crimping the edges firmly to seal.
- Heat vegetable oil in a large skillet over medium-high heat.
- Carefully place the Beliashi in the hot oil, ensuring not to overcrowd the pan.
- Fry the pasties for 3-4 minutes per side, or until golden brown and crispy.
- Remove the Beliashi from the skillet and place them on a wire rack to drain excess oil.
- Serve hot and enjoy!
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
