How to Make Besan Burfi Sweet Gram Flour Squares
- Grease a shallow 8x8 inch baking dish with ghee.
- In a frying pan, heat 1 tablespoon of ghee over medium heat. Add the cashew nuts and fry until golden brown (about 3-5 minutes). Remove and set aside.
- In the same pan, gradually add the besan, stirring continuously with a wooden spoon or spatula over low heat. Fry, stirring constantly, until the besan turns a light golden brown (about 8-10 minutes). Be careful not to burn it. Remove from heat and set aside.
- In a separate saucepan, combine 1 cup water and sugar. Heat over medium heat, stirring until the sugar dissolves completely.
- Increase the heat to medium-high and bring the sugar syrup to a boil. Continue boiling, without stirring, until the syrup thickens and reaches a one-string consistency (about 5-7 minutes).
- Reduce heat to low. Add the desiccated coconut and fried besan to the sugar syrup. Stir continuously until the mixture comes together and starts to leave the sides of the pan (about 3-5 minutes).
- Add the remaining ghee (3 tablespoons), saffron strands, and stir well.
- Cook for another 2 minutes, stirring continuously.
- Remove from heat. Stir in the fried cashews, chopped mixed nuts, and cardamom powder.
- Immediately pour the mixture into the greased baking dish and spread evenly.
- While still warm, cut into 1.5 inch squares using a sharp knife.
- Allow the burfi to cool completely before storing in an airtight container.
