Ingredients for Apple Loaf Cake

  • All Purpose Flour
  • Brown Sugar
  • 1/2 cup (1 stick) unsalted butter, melted + 6 tablespoons (3 ounces) cold unsalted butter, cut into pieces
  • 1/4 teaspoon ground cinnamon
  • Granulated Sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 4 medium apples (about 4 cups), peeled and sliced

How to Make Apple Loaf Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. Make the streusel topping: In a medium bowl, combine 1/2 cup all-purpose flour, 1/2 cup brown sugar, 1/4 cup rolled oats, 1/4 teaspoon ground cinnamon, 6 tablespoons (3 ounces) cold unsalted butter, cut into small pieces. Using your fingers or a pastry blender, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. In a large bowl, whisk together 2 cups all-purpose flour, 1 1/2 cups granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
  4. In a separate bowl, whisk together 2 large eggs, 1/2 cup (1 stick) melted unsalted butter, and 1/2 cup milk.
  5. Add the wet ingredients to the dry ingredients and gently fold with a spatula until just combined. Do not overmix.
  6. Peel and slice 4 medium apples (about 4 cups).
  7. Pour half of the batter into the prepared loaf pan and spread evenly.
  8. Sprinkle half of the apples and half of the streusel topping over the batter.
  9. Pour the remaining batter over the apples and streusel.
  10. Top with the remaining apples and streusel topping.
  11. Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let the cake cool in the pan for 10 minutes before running a knife around the edges to loosen.
  13. Invert the cake onto a wire rack to cool completely. Serve and enjoy!

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
