How to Make Cheese Bacon Chive Scones

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, whisk together 1 large egg and 1 tablespoon of milk to make the egg wash. Set aside.
  4. In a large bowl, whisk together 2 cups all-purpose flour, 1/4 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  5. Cut 1/2 cup (1 stick) cold unsalted butter, cut into small cubes, into the flour mixture using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Stir in 1 cup shredded cheddar cheese, 1/2 cup cooked and crumbled bacon, and 2 tablespoons chopped fresh chives.
  7. Make a well in the center of the dry ingredients. Add 3/4 cup milk and gently stir with a wooden spoon until the dough just comes together.
  8. Turn the dough out onto a lightly floured surface and knead gently for 1-2 minutes until smooth.
  9. Roll or pat the dough to 1-inch thickness. Use a 2 1/2-inch floured cookie cutter to cut out scones.
  10. Place scones onto the prepared baking sheet.
  11. Brush the tops of the scones with the egg wash.
  12. Sprinkle 1 teaspoon of grated cheddar cheese over each scone.
  13. Bake for 15-20 minutes, or until golden brown and the cheese is melted and bubbly.
  14. Let cool slightly on a wire rack before serving.
