How to Make Chic Greek Salad

  1. Combine 1 English cucumber, thinly sliced; 2 cups cherry or grape tomatoes, halved; 1/2 red onion, thinly sliced; 1/2 red bell pepper, thinly sliced; 1 (14-ounce) can artichoke hearts, drained and quartered; and 1/2 cup fresh parsley, chopped, on a large platter.
  2. Drizzle 2 tablespoons fresh lemon juice evenly over the vegetables.
  3. Season generously with salt and freshly ground black pepper to taste.
  4. In a small bowl, whisk together 2 tablespoons finely chopped shallots, 1 tablespoon red wine vinegar, 1 teaspoon dried oregano, and a pinch of salt.
  5. Slowly whisk in 1/4 cup extra virgin olive oil until emulsified.
  6. Pour the dressing evenly over the salad.
