How to Make Barb's Asparagus Salad

  1. Wash and snap off the tough ends of 1 pound asparagus.
  2. Cut the asparagus diagonally into 1-inch pieces.
  3. Blanch the asparagus in boiling water for 2-3 minutes until bright green and crisp-tender. Immediately plunge into ice water to stop the cooking process.
  4. While the asparagus is blanching, prepare the remaining ingredients: peel and segment 1 cup mandarin oranges, halve 1 cup seedless green grapes, thinly slice 1/2 cup carrots, finely chop 1/2 cup celery, and thinly slice 2 green onions.
  5. In a large bowl, combine the blanched asparagus, mandarin oranges, grapes, carrots, celery, and green onions.
  6. Add your favorite dressing (we recommend a champagne vinaigrette – see recipe notes).
  7. Gently toss to coat.
  8. Season with salt and pepper to taste.
  9. Top with 1/4 cup toasted slivered almonds and serve immediately or chill for later.
  10. Recipe Notes: For a delicious champagne vinaigrette, whisk together 1/4 cup champagne vinegar, 1/2 cup olive oil, 1 tablespoon Dijon mustard, 1 teaspoon honey, salt, and pepper to taste.
