How to Make Comforting Beef Stew Just Like Grandma Used To Make

  1. Heat 2 tablespoons of olive oil in a large Dutch oven or pot over medium-low heat.
  2. Place 2 cups of cubed beef in a plastic bag with 1/2 cup all-purpose flour. Shake vigorously to coat.
  3. Remove beef from bag and swirl with a wooden spoon to ensure even flour coating. Brown the beef in batches in the Dutch oven.
  4. Remove browned beef from pot and set aside.
  5. Add 1 large chopped onion to the pot and cook until softened, about 5 minutes.
  6. Add 2 teaspoons minced garlic, the remaining flour, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir until lightly browned.
  7. Return the beef to the pot. Add 2 cups chopped carrots, 2 cups chopped celery, 1 cup chopped potatoes, 6 cups beef broth, 1 teaspoon of minced garlic, 1 tablespoon chopped fresh parsley, 1 teaspoon dried thyme, and 1/2 teaspoon dried basil. Stir well.
  8. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours, stirring occasionally.
  9. Add 1 (28-ounce) can of stewed tomatoes, 1 cup sliced carrots, and 1 cup sliced celery. Stir well and cook for 25 minutes.
  10. Stir in 1 cup of sliced mushrooms and 1 cup of frozen peas. Cook for 5 minutes.
  11. Taste and adjust seasoning as needed. Spoon stew into bowls and serve with toasted sourdough or French bread and butter. Allow to cool slightly before enjoying.
